In July, R&I released its annual list of the Top 400 chain restaurants; Consumers' Choice in Chains picks up where that special report left off. Whereas the Top 400 examines revenue and growth at the nation's largest chain concepts, Consumers' Choice in Chains looks at what drives those operators' success - customers.

Several frequently asked Second 100 questions are answered. If a chain did not generate at least $180.0 million in domestic systemwide sales in its latest year -- the result attributed to the No. 200 chain in this year's study -- it will not appear in any of the Second 100 Chains listings. For consistency and comparability, the publication estimates partial-year sales contributions from units opened and closed during the respective years. Companies were included among the Second 100 because of their foodservice revenue, not their total revenue. The Second 100 study attempts to exclude proceeds from all other business activities, such as manufacturing, distribution, general retail, nonfood contract services, property rental and amusements.

Restaurants & Institutions' annual Top 400 ranking, launched in 1965, originally listed chain restaurants alongside other foodservice giants (independent restaurants, colleges, etc.), assigning "commercial equivalents" to the sales figures of noncommercial organizations, such as the U.S. Army, which earned the top spot in that inaugural ranking with $471.7 million in sales. Many chains from that first list have long since disappeared.

The rankings of Restaurants & Institutions' annual Top 400 are intended to show how the chains that make up the 2009 R&I Top 400 place in individual core-menu categories. Within each segment, concepts are listed in descending order by their 2008 systemwide food-and-beverage sales. As with the main ranking pages, chains are defined as restaurant concepts with more than five locations operating under the same name.

Many of the major US foodservice operators working to build sales and profits as a safeguard against unforeseen expenses in their most recent completed fiscal years found time to be no ally, as recessionary pressures mounted with each passing month. The 36th Annual Nation's Restaurant News Top 100 census of the largest foodservice chains ranked by US systemwide sales shows that the country's mightiest multiunit operators in their last finished fiscal years pushed up their aggregate total take by 3.85%, to $208.11 billion. McDonald's continued its reign as king of the Top 100 chains, with latest-year US systemwide sales of $29.99 billion. Chick-fil-A, Panera Bread, Papa Murphy's Take 'N Bake Pizza and Subway also achieved double-digit systemwide sales growth in the latest year. DineEquity marked a 461.57% increase in revenues, to $1.34 billion, thanks to having booked its first full year of revenues from the Applebee's Neighborhood Grill & Bar chain acquired late in the preceding fiscal year.

Many individual restaurants in Restaurants & Institutions' Top 100 Independents list reported losses in 2008 - a reflection of the recession's grip on diners' travel and entertainment budgets. Even so, $11 million in sales turned out to be the minimum required to crack this year's list. Restaurants in the Top 100 Independents had combined food-and-beverage sales of $1.52 billion in 2008. In a roller coaster of a year, aggregate sales ended up essentially flat relative to 2007's $1.53 billion. Tao Las Vegas, the top-ranking restaurant for three years running, earned a very impressive $68.4 million in F&B revenue in '08; however, it represented a modest 3% gain over Tao Las Vegas' 2007 sales (by comparison, the restaurant's sales rose 20% from 2006 to 2007). The rest of the top five-including New York City's Tavern on the Green.

     The article reports on the growth of the chain-restaurant business in the U.S. in 2008. The increase compares with 6.8 percent year-over-year growth for last year's Top 400 and a 9.3 percent sales increase the previous year. However, unit growth has slowed. This year's Top 400 chains operated roughly 274,000 locations at the end of 2007, compared with the 269,000 units for the 400 chains in last year's ranking. This year's 1.9 percent increase is about half the 3.9 percent increase in global locations posted the previous year.
