Professional Biography

Following a brief retirement after 25 years of full-time teaching, Gregory X. Norkus rejoined the Hotel School as a part-time faculty member in 2006. During his 26-year relationship as a senior lecturer with Cornell, Norkus has been an active participant in the food and beverage management curriculum in both degree and executive education programs at the school. He is an expert in the areas of restaurant economics, restaurant operations and foodservice procurement; is published in the Cornell Hotel and Restaurant Administration Quarterly and the author of an instructional DVD on Restaurant Economics, produced and published by the School of Hotel Administration and The Culinary Institute of America in Hyde Park, New York.
