By: Sheryl E. Kimes Ph.D.

Executive Summary: When developing an available restaurant revenue management (RRM) system, an operator must first understand current conditions and performance. Following this, the operator must evaluate the possible drivers of that performance. This understanding will help managers determine how to improve revenue per available seat-hour (RevPASH) statistics. Finally, the manager must monitor the impact of implemented changes on revenue performance.

The five steps are:
1. Establish the baseline.
2. Understand the drivers.
3. Make recommendations.
4. Implement the changes.
5. Monitor outcomes.
