Peter Jones
Prof. Peter Jones holds the Chair in Hospitality Management in the School of Management at the University of Surrey. Previously he was the ITCA Chair of Production and Operations Management, where he was also responsible for the Travel Catering Research Centre. His research has focused on how operations management contributes to performance improvement and competitive advantage. Prof. Jones has published twelve textbooks in areas such as Hotel Operations, Food and Beverage Operations, and Flight Catering. His published articles relate to research studies on revenue management, innovation, productivity, outsourcing, and other operations issues.
